Quetzal Postres de autor Pizca

Signature dessert collections in Guatemala

Pizca’s signature desserts, pastry with a defined identity, are presented as collections developed throughout the year from distinct creative perspectives.

Seasonal collections are shaped by the availability of crops at different times of the year. In this approach, the ingredient takes center stage, guiding desserts and tastings that follow the natural rhythm of the season, with fresh fruit, local products, and a contemporary interpretation of the moment.

Cultural collections, in contrast, are developed as representations of Guatemala, grounded in research, symbolic references, and the use of native and ancestral ingredients handled with technical precision. These proposals have established a body of work that positions the chef within the international culinary scene.

Seasonal Collections

Seasonal collections evolve throughout the year, guided by product seasonality. They are conceived around the availability of fruits and fresh ingredients at their peak.

Each proposal is built around the ingredient as its central focus. From there, desserts and tasting menus are developed in response to the natural cycles of local crops. At certain times, these collections may coexist with the cultural ones, when seasonality aligns with celebrations within the Guatemalan calendar.

What is a signature dessert at Pizca?

Each collection begins with an idea: a story, a symbol, or a cultural reference from Guatemala translated into flavor, texture, and aesthetics. The search for the ingredient and its sweet harmony is fundamental in every proposal developed by Chef Ronald García.

Under his direction, the signature desserts at Pizca are shaped not only by precise technical construction, but also by a cultural narrative that connects identity, memory, and contemporaneity.
