Cakes, Contemporary Bakery, and Traditional Guatemalan Bakery
At Pizca, our cakes are crafted with precision, thoughtfully sourced ingredients, and a technical approach that values quality over volume. Each recipe is built from the ground up, with a clear focus on balance across flavor, texture, and presentation.
Muffins and cookies follow the same approach: doughs and fillings are prepared entirely in-house, without shortcuts, with close attention to detail at every stage of the process. Traditional Guatemalan bakery, in turn, is approached with respect for ancestral technique and the origin of each ingredient, preserving the essence of every preparation within a contemporary context.
Pasteles clásicos bien hechos
En Pizca ofrecemos pasteles elaborados con un enfoque claro: calidad premium en cada detalle. Inspirados en los recuerdos de nuestra niñez, estos pasteles retoman lo esencial—ingredientes bien seleccionados, técnicas cuidadas y un equilibrio preciso en cada receta.
La propuesta se centra en pasteles clásicos bien hechos, como el Fresas con Crema o Chocolate, que van variando según la temporada para trabajar siempre con ingredientes en su mejor punto. No se trata de exceso, sino de precisión: texturas limpias, sabores definidos y una ejecución consistente.
Cada receta está pensada desde una comprensión local del gusto, esa que solo un guatemalteco puede interpretar con fidelidad para otros guatemaltecos. El resultado son pasteles que conectan directamente con ese recuerdo auténtico de lo bien hecho, donde cada componente cumple su función y la calidad se percibe desde el primer bocado.

Contemporary Bakery
Contemporary bakery at Pizca is developed through doughs and fillings made from scratch, with technical control at every stage of the process. Muffins and cookies are built from the ground up, with a focus on texture, moisture, and balanced flavor. The approach centers on precise, consistent execution, where each piece meets clear standards of quality without relying on mass production.












Traditional Bakery
In this line, Chef Ronald García presents quesadilla and Jutiapa corn bread as a tribute to memory and craft. These are recipes inherited from his grandparents, Don Carlos and Doña Catalina García, executed with respect for the original formulation and with standardized technique in every process. They are not reinterpretations, but a preservation of the structure, texture, and flavor that define these preparations within Guatemalan tradition.
This work was published by the Spanish magazine Dulcypas in 2025, as part of a research feature dedicated to Guatemala’s traditional bakery and its cultural value within contemporary fine pastry.
